While all vegetables have fiber, artichokes are high in fiber. A medium artichoke has over 20% of your daily fiber intake! That means that you’ll be feeling fuller, and you’ll be reducing your risk of diseases like heart disease and even breast cancer. The average American only ingests about half the amount of recommended daily fiber, making this artichoke dip a great way for you to get your full daily intake of dietary fiber.

Additionally, if you know anyone who suffers from Irritable Bowel Syndrome (also known as IBS), you know that it is a debilitating illness that reduces the quality of life for many people. Artichokes, and even just artichoke leaf extract, have been shown to reduce the symptoms of IBS. Artichokes can reduce inflammation and also can help balance gut bacteria, making it a great addition to any diet.

How to make Spinach Artichoke Dip

You don’t need any special kitchen utensils for this recipe. Just the normal everyday knives, cutting board, and oven safe dish are needed.

This spinach artichoke dip, depending on they type of mayonnaise you use, can be made Whole30, Paleo, Keto, or Vegan.

Ingredient wise, you will need:

  • onion
  • olive oil
  • spinach
  • artichokes (from a can or marinated – it’s your choice!)
  • salt
  • garlic salt
  • mayonnaise

Preheat your oven to 350°F.

Heat the olive oil over medium heat in a large pan. Chop half a medium onion and add it to the pan. Stir frequently for a few minutes until fragrant and onions are translucent. Chop about two cups of spinach, and add it to the pan. As the spinach cooks, add in chopped artichokes, either from a can or marinade. Continue to stir the vegetables. Add in the salt and garlic powder, and continue to stir.

Serve this dip with your favorite crackers that are compliant for your diet, or with some vegetables if you’re on the Whole30!

Remove the vegetables from a pan and place them in an oven-safe dish. Add in one cup of mayonnaise of your choice and stir it all in. Your choice of mayonnaise will go along with the diet of your choice; be sure to pay attention to the ingredients if you are on the Whole30! There are only so many brands of mayonnaise that are compliant.

After mixing your vegetables with the mayonnaise, place your dish in the oven and bake it for 45 minutes to an hour. The dip should be bubbly and golden!

Serve the dip with some delicious crackers of your choice, or vegetables. I personally love Simple Mills’s crackers, but it also tastes good with carrots and celery.

Ingredients
  

  • 1/2 medium white onion, chopped
  • 2 cups fresh spinach, chopped
  • 8 artichoke hearts From a can or in marinade
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 cup mayonnaise

Instructions
 

  • Preheat your oven to 350°F.
  • Heat the olive oil over medium heat in a large skillet.
  • Chop the white onion and add it to the heated skillet with the oil. Stir frequently to cook.
  • Chop the spinach and add it to the pan. Stir.
  • Chop the artichoke hearts and add it to the pan.
  • Add the salt and garlic powder, and stir it in.
  • Once the vegetables have cooked, place them in an oven safe dish.
  • Stir into the vegetables the mayonnaise.
  • Bake the dip for 45-60 minutes. It should be bubbly and golden by the time you take it out.
