
I’m definitely on a beet kick, here! Beets are an incredible superfood that I’ve enjoyed finding ways to incorporate more into my diet. These easy beet chips are a great way to use up any beets you have from the garden, and they keep well so that you can munch on them throughout the next few weeks! I also love crumbling up these chips on salads, or using them to eat some tasty guacamole. They are the perfect addition to your Whole30, paleo, or vegan snack time or meal, and they can be ready in under 20 minutes!
If you haven’t noticed, beets are a favorite superfood of mine! I’ve used them in a variety of recipes, including my Eggplant Beet Burger and Easy Pickled Beets. They also make an appearance as a tasty side to my Grilled Chicken with Blueberry and Blackberry Vinaigrette. Needless to say, beets are certainly a staple in my life and I hope you enjoy these beet chips as well!
How to make Air Fryer Beet Chips
There really isn’t much to this recipe, but I highly recommend using an Air Fryer to make this process go faster. You can of course use a conventional oven, but the beet chips might not cook as evenly or may not get as crispy as they do in the Air Fryer. Totally your call!
For this recipe, you will only need three simple ingredients:
- beets
- olive oil or oil of your choice
- salt
First, peel the beets. The tough outside is edible, but I personally prefer to remove them for this particular recipe.
After removing the peels, slice your beets into round, chip-like shapes. Be sure to make them as close in thickness as possible, as you will have different cooking times if they are too different in width. I personally try to slice mine less than a quarter inch thick.

Since beets can be very tough and these chips are something that you want to make into thinner slices, you can also steam the beets beforehand to soften them up. I have done this on a few occasions, but if you’re really struggling it can help make the slicing process easier. Simply poke holes in the beets using a fork or knife, and then steam them for about 15-20 minutes. They should be softer and easier to slice into chip shapes once they have been steamed.
Next, place your chips into a bowl and drizzle them with olive oil and salt. Toss them so that the oil and salt evenly coats the chips.
Place the now coated chips on a tray for your Air Fryer. Be sure not to overlap them! They will not cook evenly if you do.
Cook the chips at 375°F for 15 minutes. If you have an Air Fryer Oven like I do, the heat source is at the top of the oven and can affect the cooking times for each tray. I recommend either rotating the trays or keeping an eye on the top tray. The Air Fryer oven is likely to overcook the chips on the top tray while the chips on the tray below might need more time.
Once the chips are cooked, they’re ready to be used! I love using mine as just a snack, but they are also great for dipping guacamole and any dip that your heart desires. I recommend using some sort of dairy free ranch or if you tolerate it, goat cheese dip would also be delicious!

Air Fryer Beet Chips (Whole30, Paleo, Vegan)

- Air Fryer
Ingredients
- 3 large beets
- 2 tsp olive oil
- 1/2 tsp salt
Instructions
- Start by peeling the beets to remove the skin.
- Slice the beets into chip-like discs, no more than 1/4" in thickness. Try to make all the chips as close to the same width as possible.
- Toss the chips in olive oil and salt until evenly coated.
- Place chips on a tray in the Air Fryer, careful not to overlap them in anyway.
- Cook the beets at 375°F for 15 minutes. If using an Air Fryer Oven, be sure to keep an eye on the top tray so that the top tray does not overcook.
- Allow chips to cool before eating. Enjoy!
