Eggplant Fries with Marinara Sauce (Whole30, Paleo, Vegan)

These quick eggplant fries with marinara sauce are a delicious appetizer or full meal, and a great way to pack in more superfoods into your Whole30, paleo, or vegan diet!

Ingredients
  

  • 1 whole eggplant
  • 2 tbsp ground flax seeds
  • 4 tbsp warm water
  • 1/4 cup tapioca flour
  • 1/2 tsp salt
  • 1/2 tsp oregano
  • 1/2 tsp parsley
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried basil
  • 1 tbsp olive oil
  • 1 cup marinara sauce of your choice

Instructions
 

  • Combine your flax meal and warm water in a medium bowl to make your flax egg. Set aside.
  • Cut the eggplant into fry shapes. Be sure not the cut them too thickly or else they will need more time to cook.
  • Once the flax egg has formed, add in the salt, oregano, parsley, garlic powder, onion powder, dried basil, and olive oil. Stir well, then add the tapioca flour to create a thick batter.
  • Line the Air Fryer Tray with parchment paper and set aside.
  • Generously coat each eggplant fry with the batter, and then place on the parchment paper lined Air Fryer tray. Be sure not to overlap the fries.
  • Cook the fries in the Air Fryer at 370°F for 15-20 minutes. Depending on how thick your fries are, they may need more time.
  • Serve the Eggplant Fries hot with your choice of marinara sauce. Enjoy!
