Eggplant Fries with Marinara Sauce (Whole30, Paleo, Vegan)

These quick eggplant fries with marinara sauce are a delicious appetizer or full meal, and a great way to pack in more superfoods into your Whole30, paleo, or vegan diet!

- 1 whole eggplant
- 2 tbsp ground flax seeds
- 4 tbsp warm water
- 1/4 cup tapioca flour
- 1/2 tsp salt
- 1/2 tsp oregano
- 1/2 tsp parsley
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried basil
- 1 tbsp olive oil
- 1 cup marinara sauce of your choice
Combine your flax meal and warm water in a medium bowl to make your flax egg. Set aside.
Cut the eggplant into fry shapes. Be sure not the cut them too thickly or else they will need more time to cook.
Once the flax egg has formed, add in the salt, oregano, parsley, garlic powder, onion powder, dried basil, and olive oil. Stir well, then add the tapioca flour to create a thick batter.
Line the Air Fryer Tray with parchment paper and set aside.
Generously coat each eggplant fry with the batter, and then place on the parchment paper lined Air Fryer tray. Be sure not to overlap the fries.
Cook the fries in the Air Fryer at 370°F for 15-20 minutes. Depending on how thick your fries are, they may need more time.
Serve the Eggplant Fries hot with your choice of marinara sauce. Enjoy!
