Fried Green Tomatoes (Paleo, Whole30, Vegan)

These tangy and tasty fried tomatoes make a great appetizer, snack, or even a light meal on your paleo, Whole30, or vegan menu!

Ingredients
  

  • 3 medium-large green tomatoes
  • 1 cup cassava flour
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp ground cumin
  • 3 tbsp ground flax seed (can substitute 3 eggs)
  • 9 tbsp water (omit if using eggs)
  • 2 tbsp almond milk
  • 1/2 cup olive oil

Instructions
 

  • Combine the cassava flour, salt, pepper, and ground cumin in a bowl and set aside.
  • Combine the ground flax seed with the water and almond milk. Set aside and let set for about 10 minutes. If using eggs, combine the eggs with the almond milk and set aside.
  • Once the flax eggs have set, slice your tomatoes into 1/4"-1/2" slices.
  • Heat the olive oil over medium-high heat in a frying pan.
  • Coat the tomato slices in the cassava flour mixture. Then, dip into the flax egg mixture and cover completely. Place back into the cassava flour mixture for a second time, and coat completely.

For frying method:

  • Place the now battered tomatoes into the oil. It should immediately bubble once placed in the oil. Cook on each side for about 3-4 minutes on each side until golden brown. Remove from the oil and place on a plate lined with a paper towel to soak up the excess oil.

For Air Frying method:

  • Line your Air Fryer trays with parchment paper. Spray each side of your battered green tomato with avocado oil spray or olive oil spray. Cook at 370°F for about 15 minutes. Flip halfway through to ensure even cooking. Check on them occasionally to see if you need to spray them with more oil.
