Paleo Birthday Mug Cake (Paleo)

- 1/2 tbsp coconut oil, melted and cooled to room temperature
- 1 egg
- 1 tsp vanilla extract
- 1 tbsp almond milk/non dairy milk
- 1 tbsp coconut sugar
- 1 tbsp coconut flour
- 1 tbsp almond flour
- 1/8 tsp baking powder
- 1/8 tsp baking soda
- 1/8 tsp salt
- 1 tbsp rainbow sprinkles
Melt the coconut oil in the bottom of the mug and allow it to cool back to room temperature.
Mix in the egg, vanilla extract, and almond milk. Stir well.
Next, stir in the coconut sugar and allow it to completely melt.
Add the coconut flour, almond flour, baking soda, baking powder, and salt. Mix thoroughly.
Once everything is mixed together, stir in your sprinkles.
Cook the mug cake in the microwave for 2-3 minutes (depending on the strength of your microwave, it could take up to 3 minutes)
