Paleo Apple Cinnamon Muffins (Paleo)

These easy and delicious paleo muffins are the perfect fall and winter breakfast or brunch item!

  • 2 tbsp coconut oil, melted
  • 4 eggs
  • 2 tsp vanilla extract
  • 1/4 cup almond milk
  • 2 tbsp coconut sugar
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 apple, chopped


  • Preheat your oven to 350°F.
  • In a large bowl, combine the wet ingredients and stir until they are completely combined (melted coconut oil, eggs, vanilla extract, and almond milk).
  • In a medium sized bowl, combine all the wet ingredients until they are completely combined (almond flour, coconut flour, baking powder, baking soda, salt, cinnamon, nutmeg, salt).
  • Gently add some of the dry mixture to the wet mixture. Stir until combined, adding more of the dry mixture until it has been completely combined with the wet mixture.
  • Gently add in your chopped apples and fold into the mixture.
  • Line muffin tins with liners or spray with cooking spray. Fill each 3/4 full.
  • Bake for 15-20 minutes or until fork or toothpick inserted into the muffin comes back out clean.
  • Once completely baked, remove from oven and allow to cool before serving.
  • Optional: add coconut butter drizzle on top, or eat as is!
